Mini Burger Cupcakes

Ingredients:


One batch of yellow cupcakes, baked as normal, with wrappers and everything.

One 9x13 inch pan of brownies

One batch of buttercream frosting

About 1/2 cup of shredded coconut

Green, red, and yellow food dye


Directions:


1) Prepare the frosting, or "ketchup and cheese." Make the buttercream frosting and dye half of it red, half yellow.


2) Prepare the brownies, or "patties." Using a 2 or 3 inch round cookie cutter, cut out small circles. You can press the leftover scraps together and cut more brownies, or just eat them!


3) Prepare the coconut, or "lettuce." In a small bowl, mix the coconut with a small drop of liquid green food coloring.


4) Prepare the cupcakes, or "buns." Remove the wrappers. Using a smooth edged knife, slice each bun in half. You can do all of them in the beginning or slice as you make each cupcake.


5) Begin to assemble the cupcakes. Set down the bottom half of the cupcake and carefully place a "patty" on top. Pipe on some "cheese" with the yellow frosting, allowing some of it to hang over the edge. add the ketchup on top by piping a small circle. If you find yourself running out of red frosting later on, you don't need to fill in the circle. You can just pipe on one or two rings. Sprinkle on some "lettuce" around the edges and place the top bun on top, pressing down slightly.


7) For extra decor, I filled a small tub with red frosting, for "ketchup," and cut some strips out of a cupcake for "fries."
