Mega Oreo Stuffed Cookies


These cookies are probable the best things you'll ever eat. For one thing, they involve two of the world's best cookies: Oreos and chocolate chip. Together? Well, let's just say that it's amazing. Plus, any cookie with a whole cup of brown sugar is bound to taste good. Next time you're in the mood for cookies, try these out. This recipe is originally from Broma Bakery (Brownie-Stuffed Chocolate Chip Cookies), but a family relative had the idea to switch out the brownies with Oreos.


Ingredients:

3/4 cup unsalted butter, softened

1 cup brown sugar

1/4 cup granulated sugar

1 egg

2 teaspoons vanilla extract

2 cups all purpose flour

2 teaspoons cornstarch

1 teaspoon baking soda

1 teaspoon salt

1 cup bittersweet chocolate chips


Directions:


1) In the large bowl of a stand mixer, cream the butter and sugars until light and fluffy, about three minutes. Beat in the egg and vanilla.


2) In a small bowl, combine the flour, cornstarch, baking soda, and salt.


3) Pour the dry ingredients into the wet ones and stir until combined. Stir in the chocolate chips.


4) Line two baking sheets with parchment paper. Scoop 1 1/2 tablespoons of dough onto a sheet and flatten into a thick disk.


5) Place an Oreo in the center of the disk.


6) Place another disk of dough, 1 1/2 tablespoons big, on top of the Oreo.


7) Use your fingers to pinch the edges together. Chill cookies for 1 hour in the fridge, covered in plastic wrap.


8) Bake cookies for 15-20 minutes at 350 degrees, switching the racks in between. Cookies will seem slightly under cooked. Enjoy!
