Funfetti Chocolate Chip Cookies


I make cookies way too much, but at least my house smells good. Here's yet another chocolate chip cookie recipe, this one with loads of colorful sprinkles and brown sugar. The recipe is from Sally's Baking Addiction, but I just reworded some of the steps and added more chocolate chips.


Ingredients:

2 1/2 cups all-purpose flour

2 teaspoons cornstarch

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (2 sticks) unsalted butter, softened to room temperature

2 large eggs, room temperature

2 teaspoons pure vanilla extract

1 3/4 cups semi-sweet chocolate chips

2/3 cup sprinkles


Directions:


1) Whisk together the flour, cornstarch, baking soda, and salt in a medium bowl. Set aside.


2) In the large bowl of a stand mixer, beat the butter on medium-high speed for about one minute, until smooth.


3) Add the sugars and beat on medium-high speed about two minutes, until creamed.


4) Add in the eggs and vanilla and beat until combined, about one minute. Scrape down the sides of the bowl and beat again as needed.


5) Mix together the dry and wet ingredients on low speed, until combined.


6) Stir in the chocolate chips and sprinkles. Cover and chill for 1 1/2 hours.


7) Preheat oven to 350 degrees and line a baking sheet with parchment paper or silicone baking mat. Roll out balls of dough, about 1 1/2 tablespoons per cookie. Place about 3 inches apart and bake for 12-13 minutes. The centers will look soft and uncooked. Enjoy!
